Method
 

Preparation Steps
  1. In a mixing bowl, combine lemon juice and zest to create the marinade. Add minced garlic, salt, pepper, and olive oil. Whisk until well combined.
  2. Pat the chicken dry and rub the lemon marinade all over it. Let it marinate for at least 30 minutes or up to 2 hours.
  3. Preheat your oven to 425°F (220°C).
  4. Wash and chop the carrots, potatoes, and onions. Toss them with olive oil, salt, and pepper in a bowl.
  5. Place the marinated chicken on top of the prepared vegetables in the roasting pan. Roast for 1 to 1.5 hours, until the internal temperature reaches 165°F (75°C).
  6. Remove from the oven, tent with aluminum foil, and let rest for 10-15 minutes. Carve and serve.
