Preparation Steps
- In a mixing bowl, combine lemon juice and zest to create the marinade. Add minced garlic, salt, pepper, and olive oil. Whisk until well combined.
- Pat the chicken dry and rub the lemon marinade all over it. Let it marinate for at least 30 minutes or up to 2 hours.
- Preheat your oven to 425°F (220°C).
- Wash and chop the carrots, potatoes, and onions. Toss them with olive oil, salt, and pepper in a bowl.
- Place the marinated chicken on top of the prepared vegetables in the roasting pan. Roast for 1 to 1.5 hours, until the internal temperature reaches 165°F (75°C).
- Remove from the oven, tent with aluminum foil, and let rest for 10-15 minutes. Carve and serve.
